
Ingredients
250g Caster Sugar
2 Large Eggs Beaten
125g Peanut Butter
2 Medium Bananas – Very Ripe
500g Self Raising Flour
1 Teaspoon Baking Powder
Method
- Preheat oven to 180C/160 fan/Gas 4
 - Lightly grease a 2lb Loaf tin and line with baking parchment.
 - In a large mixing bowl, mix the butter and sugar until light and fluffy then add 2 beaten eggs a little at a time with a tablespoon of the flour, beating well.
 - Stir in the peanut butter, bananas, flour and baking powder.
 - Pour into the prepared tin and bake for around 70 minutes, or until a knife inserted into the centre of the loaf comes out clean. Check the loaf at 5 minute intervals from around 45 minutes as the time may vary depending on the shape of your tin.
 - Cool in the tin for 10 minutes then remove to a wire rack to cool before adding any desired toppings.
