After School Banana Bread

250g Caster Sugar

2 Large Eggs Beaten

125g Peanut Butter

2 Medium Bananas – Very Ripe

500g Self Raising Flour

1 Teaspoon Baking Powder

  1. Preheat oven to 180C/160 fan/Gas 4 
  2. Lightly grease a 2lb Loaf tin and line with baking parchment.
  3. In a large mixing bowl, mix the butter and sugar until light and fluffy then add 2 beaten eggs a little at a time with a tablespoon of the flour, beating well.
  4. Stir in the peanut butter, bananas, flour and baking powder.
  5. Pour into the prepared tin and bake for around 70 minutes, or until a knife inserted into the centre of the loaf comes out clean. Check the loaf at 5 minute intervals from around 45 minutes as the time may vary depending on the shape of your tin.
  6. Cool in the tin for 10 minutes then remove to a wire rack to cool before adding any desired toppings.
  7. Enjoy!
