Banana Oat Cookies

1 Ripe Banana

100g Oats

2 Tablespoons Honey

1 Tablespoon Coconut Oil (or similar) or butter

50g Chocolate Chips

Pinch Salt

Plain flour for dusting your hands

You will need: large bowl, wooden spoon, baking tray, baking parchment.

  1. Pre heat the oven to 180C/160 Fan/Gas 4
  2. Line a baking sheet with baking parchment
  3. In a large bowl, mash the banana until smooth
  4. Mix in the oats, honey and oil
  5. Leave the mixture for 20 minutes for the oats to soften
  6. Add the salt and chocolate chips
  7. Lightly dust your hands in plain flour, then roll the mixture into balls
  8. Put the balls on the prepared sheet about 3 cms apart and gently press to form discs of about 1 cm thick 
  9. Bake in the oven for 12-15 minutes or until golden
  10. Transfer to a rack until cooled
  11. Enjoy!
